Half dayRissani Market & Tafilalet Heritage Tour
Wander Rissani’s lively souk with a local guide — dates, spices, livestock and the history of ancient Sijilmassa.

Rissani has been a trading hub for centuries, and its market is still where the region shops. This proposed experience follows ingredients from the stalls to the kitchen, ending with madfouna — the stuffed flatbread often nicknamed ‘Berber pizza’. This is a proposed signature concept — every element is subject to confirmation by our team when you enquire, depending on season, weather and local availability.
Proposed experience. This is an original concept we are developing. It is not yet a fixed product — ask us whether it can be arranged for your dates and group, and we will confirm exactly what is possible.
Who it’s for: Food lovers, home cooks and curious travellers who want to taste the Tafilalt region through its market and kitchens.
We would drive from Merzouga to Rissani (approx. 45 minutes) and explore the market with a local guide: spice sellers, piles of dates from the surrounding palm groves, vegetable stalls and, on certain days, the lively livestock area. The guide shares stories of the town’s caravan past and helps you buy ingredients.
Market days in Rissani are traditionally Sunday, Tuesday and Thursday; on other days the souk is quieter but still open. We will confirm the best day for your plan.
Back in the Merzouga area, a local family or cook would show you how to make madfouna: dough stuffed with minced meat or vegetables, onions, spices and herbs, then traditionally baked in a clay oven or buried in the hot sand by a fire. Vegetarian versions are possible.
The day ends sharing the meal and mint tea. Family visits only take place with the family’s consent and fair payment for their time.
Timings shift with the season (sunrise and sunset change by more than two hours across the year).
We confirm these details in your written quote:
The market is busy: keep valuables secure and watch your step around carts and animals. The cooking involves hot ovens or fire — follow your host’s instructions. Please ask before photographing people, particularly in the market and at the family home.

It is a proposed concept rather than a fixed departure. Tell us your dates and group, and our team will confirm what can be arranged, adapt the plan if needed and send you a written proposal with the price on request.
