Short (≤ 2 h)Local Food Experience: Tastes of the Tafilalet
Taste medfouna, Tafilalet dates, slow-cooked tagine and more with local hosts who know the region’s food best.

Rissani has been the trading heart of the Tafilalet oasis for centuries. This half-day tour takes you from Merzouga into its covered souk, past heaps of dates and spices, and out to the earthen ksour and ruins that recall the great caravan city of Sijilmassa.
Rissani’s souk is a working market, not a show. Farmers come in from the surrounding oasis to buy and sell vegetables, dates, spices, tools, fabrics and livestock. The market is busiest on its main market days, traditionally held several times a week — but days can change, so we always confirm them locally before your visit. On quieter days the permanent covered market is still open and makes for a calmer introduction.
With your guide you’ll walk through the produce lanes, the spice and date sections and, when it’s running, the famous ‘donkey parking’ where traders leave their animals. You can taste local dates (the Tafilalet is renowned for them), learn how medfouna — a stuffed bread baked in a clay oven or in hot sand — is made, and stop for mint tea in a quiet corner.
Time allowing, the tour continues to an old ksar such as Ksar Oulad Abdelhalim and the scattered remains of Sijilmassa, once a major terminus of trans-Saharan caravan routes. Shopping is optional at every stage: your guide will help you bargain if you want to buy, but there is never pressure to do so.
Timings shift with the season (sunrise and sunset change by more than two hours across the year).
We confirm these details in your written quote:
The souk is crowded and uneven underfoot — wear closed shoes and keep valuables secure. Watch out for carts, donkeys and motorbikes in the lanes. Summer days are very hot, so we start early. Dress modestly; covered shoulders and knees are appreciated.

The souk is traditionally busiest on several set days each week, but these can change. We confirm the main market days locally before your visit; the covered market is also open on other days.
Not at all. Your guide is there to explain and translate, and will help you bargain only if you want to buy.
