Half dayMoroccan Cooking Class in Merzouga
Learn to cook a slow-simmered tagine and Moroccan salads with a local cook, then sit down to share the meal.

Bread sits at the centre of every Moroccan meal. This short, hands-on session shows you how it’s made around Merzouga — from flour and water to a round loaf baked in a clay oven or, where arranged, a flatbread cooked in hot sand.
Your host starts with the basics: flour (often a mix of white and wholewheat or barley), water, salt and yeast or a sourdough starter. You’ll knead the dough by hand in a wide dish, shape round khobz loaves and leave them to rise. In many homes the bread is then baked in a small domed clay oven fired with palm wood.
Depending on the location, you may also see or help with other local breads — such as medfouna, the stuffed ‘Berber pizza’ of the Tafilalet, or a flatbread cooked under hot sand and embers at a desert camp. While the bread bakes, there’s mint tea and time to talk about food traditions and daily routines in the oasis.
The session is arranged with the host’s consent and they are paid fairly for their time and ingredients. Bread-making in a private home is never guaranteed and depends on the family’s availability. Please ask before taking photos of your hosts.
Timings shift with the season (sunrise and sunset change by more than two hours across the year).
